CAULIFLOWER POHA (LOW CARB VEGAN/KETO/CANDIDA FRIENDLY)
BENEFIT :: Everyone benefits from this recipe, Cauliflower is an anti-estrogenic (fights harmful estrogens), anti-carcinogenic (anti-cancer), detoxifying vegetable (your liver's best friend), extremely low carbohydrate and high in fibre, this fluffy flower is a miracle flower although made infamous by endocrinologists and are weaned off most thyroid diets, this theory came into practice in the 1950's when our diets were iodine depleted, 3 decades later governments have ensured the addition of iodized salts into our diets, this innocent vegetable can barely rip you off the iodine required to make your thyroid hormone, unless consumed uncooked in very large quantities.
1/2 crown cauliflower head (rice) (Broccoli optional)
1 tbsp ghee or coconut oil or butter
1 tsp cumin seeds
1 tsp mustard seeds (optional)
6 cloves garlic
ginger (optional)
turmeric
1 whole onion
1 green chilli
1/2 cup green peas (optional)
roasted peanuts (optional)
- Take a pan, add 1 tbsp ghee/oil.
- add cumin seeds and mustard seeds, wait until they crackle.
- add onion, add salt, 3 minutes later add roasted peanuts, garlic and ginger flakes.
- now add the cauliflower rice and close the lid for 5 minutes, add water, add 1 tsp curry powder/suitable spice and stir well.
- add peas, cook until they are soft and serve HOT !!!
- (Optional) if you have access to some fresh coconut milk add 1/2 cup to the above preparation and enjoy !
