CARROT FRITTERS (Vitamin A snack)

 

4 medium/large carrots, sliced into thin/long pieces

1 Tbsp Extra Virgin Olive Oil/Extra Virgin Avocado Oil

Choice of Spices :: Pink salt, Dried Parsley, No salt Mixed spice

 

Pre-heat oven to 340 degrees Fahrenheit, massage the oil into the diced carrots throughly, spray the baking sheet with oil and place carrots evenly on the baking sheet without overcrowding.

 

Bake for 20-25 minutes, garnish with spices and serve with some low sugar (<3 grams) Ketchup from Trader Joes or some spicy home made Guacamole or Spicy Cashew sauce.
